Sour Cherry
House classicMontmorency cherries under a hand-cut lattice, kept tart on purpose. The pie on our sign, and the first one to sell out.
Hand-rolled in San Jose, California
We roll every crust by hand, fill it with fruit at its peak, and bake in small batches through the morning. Whole pies to order, slices while they last.
The lineup shifts with the season and the market. Slices are served from open until the tin is empty; whole pies are best reserved ahead.

Firm apples, wildflower honey, and flaky salt in a full double crust, vented by hand and brushed with cream.
Toasted pecans set in a brown-butter custard — deeper and less sweet than the diner version.
An old Southern chess pie made with Meyer lemons — silky, sunny, and just shy of sharp.
Summer blackberries under an oat-and-brown-sugar crumble, while the season lasts.
Dark chocolate pudding in a blind-baked shell, finished with softly whipped cream and shaved chocolate.
We take whole-pie orders by email so nothing gets lost — no forms, no apps.
Email info@crustpie.online with the pie you'd like, how many, and your pickup day.
We reply within a day to confirm availability and your pickup window. Whole pies need 48 hours' notice.
Collect your pie at the shop. It travels best flat, and most fruit pies are even better the next morning.
Crust is a neighborhood pie shop in San Jose's Cambrian area. We keep the menu short so every pie gets the same care: cold butter worked by hand, fruit bought at its peak, and a lattice cut with a ruler and a wheel, the way it's been done for a hundred years.
No freezer aisle, no shortcuts. When a fruit goes out of season, its pie comes off the board until next year — that's the deal that keeps everything on the menu worth baking.
